UTF8 Component Encoding

Hello all,

I've got a whack (I believe a whack is larger than a bunch, but
smaller than a slew) of WOComponents with 'encoding =
NSUTF8StringEncoding;' in the .woo.

Is there an easy way of changing this in the Component editor?

And... Is there a way of setting the default encoding for new
WOComponents?
